wow, not cheap, but you can do HDMI over Cat5...thinking about using this for house video distro.

here the new HDMIhome line with the HDMI over cat5 extender till 28m 1080p or 40m 1080p with CAT6. A splitter 1x4 with 2x8 Rj45 outputs is also planned. Really cheap.
